Thanks @alexolivier!

It would be great for this code to live in interop/authzen-api-gateways/envoy-gateway (as a peer to interop/authzen-api-gateways/aws-api-gateway).

I tried to run against the deployed envoy gateway at https://authzen-envoy-proxy-demo.cerbos.dev but did not yet get it to work.

Also needs to be rebased on main.
