This cleans-up .jenkins files for the cocoa-pipeline and the release pipeline, and updates our READMEs for the current setup.
Also added an extra step to the release pipeline to prepare the repo for the next release, which commits the empty CHANGELOG template and push it.
Lastly, this allows running the prepare-release (master-push.yml) pipeline when there is a release branch for back ported fixes, and also allows it to be run manually for beta, alpha, rc and preview versions.
