I extended the date until this year and added Maanik and other contributors.

@behinger Do you think that's fine or would you prefer to do it differently?

Fine for me, I don't know the intricacies, most likely if we would want to re-release under a different license, we would need to ask everyone in that statement to be ok with a re-license. So if you want to make money from UnfoldSim in the future maybe change it still :P
