Adding Default Credentials

Problem:

• Running profiles that don't require mongo/deduplicator will fail if the passwords aren't in their environment

Changes:

• Added default credentials in the sample.env
• Added a security warning for users to change these values

Let me know if you have any objections. It seems unnecessary, especially as a large use case of this repo is more focused on development and not necessarily deployment.
