Black bean and sweet potato, seasoned two ways

Ingredients:

  • 2 lbs black beans
  • 1.5 lbs other beans (eg pinto)
  • 9 medium sweet potatoes
  • 8 large carrots
  • 5 yellow onions
  • spices
  • flour

Steps:

  1. Boil beans. Fry onions. Roast other vegetables (chopped in ~1 inch cubes, then in oven at 350 for ~1 hour covered in oil, mixing every 30 minutes.)
  2. Food processor.
  3. Spices:
  • For 1/3 of mixture: 1 tsp salt, 3 curry powder
  • For 2/3: 2 tsp salt, 4 tsp taco seasoning.
  1. Make into burger patties, cover in flour, and place on wax-papered cookie sheets in freezer.
